SCRAMBLED CURRY CHICKPEA BREAKFAST

 

Nutritious, delightful, and simple breakfast that takes minutes to make and cost less than $5.00.

  • 2.5 Cups Chickpeas, pre-cooked
  • 3-5 sticks Carrots, steamed
  • 2-4 Cups Greens
  • 1 Medium onion, diced
  • 2 Tablespoons garlic, grated
  • 2 Tablespoons ginger, grated
  • 1 Tablespoon curry powder
  • Red wine vinegar(optional)
  • 1 Tablespoon cooking wine(or oil)
  • Cayenne pepper to taste
  • Salt to taste
  1. In a frying pan, add cooking wine and saute onion, ginger, and garlic until soft
  2. Thoroughly drain the chickpeas and add it to the pan and let it cook for 5 minutes at medium heat
  3. Stirring every 2 minutes
  4. Dice the steamed carrots and add it to the pan and stir
  5. Combine the curry and cook for a minute
  6. Add your greens and mix
  7. Lower the heat and simmer for 2-3 minutes
  8. Salt to taste
  9. Sprinkle some cayenne pepper
