SCRAMBLED TOFU BREAKFAST SANDWICH

 

A filling sandwich with healthy ingredients and taste great.

  • 4 Oz Organic Tofu
  • ½ Cup Chickpeas
  • ¼ Cup Chopped Onion
  • ½ Cup Kale
  • ¼ Cup Grated/Minced Garlic
  • ½ Cup Bell Pepper
  • 1 Tablespoon Curry
  • 2 Slices Sourdough bread
  • ½ Tablespoon Smoked Paprika
  • ⅓ Cup Cayenne Pepper
  • Salt to taste
  1. Add a small amount olive oil to a pan and place it over medium heat.
  2. Crumble tofu into the pan, breaking it up with your fingers.
  3. Add Garlic, Ginger, and Chickpeas.
  4. Mix well and Saute for two minutes.
  5. Add the rest of the ingredients and mix
  6. Cook for 2 minutes or until tofu is hot throughout.
  7. After two munites
  8. Add some scrambled Tofu to the sourdough bread
  9. Place the sandwich in a Panini press for 2 minutes
  10. Slice into two and enjoy

It goes well with a cup of coffee or fruits.
