Ready in 40 minutes
Serves 4 people

Ingredients

  • 1 can light Coconut Milk
  • 3 cups pre-cooked Lentils
  • 1 tsp Ginger
  • 1 tbsp Garlic
  • 3-4 cups Vegetable broth
  • 1 tbsp Curry powder
  • 1 tsp Onion powder
  • 1 tbsp curry paste
  • ¼ tsp Black pepper
    Salt to taste

Preparation

  1. Soak lentils for 24 hours/ pre-cook until
    almost soft.
  2. In a bowl or pan, add onion, garlic, and
    ginger.
  3. Saute until brown and add coconut milk
    and stir.
  4. Add 2 cups of broth, lentil, curry powder
    and paste after 5 minutes and lower the
    heat.
  5. Stir every 5 minutes and add broth if too
    thick.
  6. Let it simmer for 25 minutes and add salt
    and pepper to taste.

Tips

Add a tablespoon of broth to onion, ginger,
and garlic if they begin to stick to the pan.
