CURRY JOLLOF RICE – SIMPLE AND HEALTHY RECIPE

A simple, delicious, and moist rice dish that everyone would love.

  • 1 Cup Diced Tomatoes
  • 6 Oz Tomatoes Paste
  • ¼ Chop Onion
  • 3 Cup Grated Carrots
  • 41/2-51/2 Cup Water
  • 1 Tablespoon Grated Ginger
  • 2 Tablespoon Grated Garlic
  • 21/2 Cup Brown Rice
  • 3 Tablespoon Red Curry Paste
  • Salt to taste
  1. Add garlic, onion, and ginger to a cooking pot over a medium heat, no oil
  2. Stir every two minutes for 6 minutes
  3. Add diced and tomatoes paste
  4. Add 3-4 cups of water and cook until the liquid has reduced to 2 cups, approximately 30-45 minutes.
  5. Wash and rinse your rice and add to stew and stir
  6. Add another 1½ cup of water
  7. Cook medium heat for 45 munites stir occasionally
  8. Add carrots and stir
  9. Put the rice and carrots into a pan and cover with an aluminum foil
  10. Baked at 300 degrees for 30 munites
