Simple, flavorful, and delicious mushrooms make a fabulous alternative to traditional garlic mushrooms.

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 4 garlic clove, grated
  • 2 tablespoons tomato paste
  • ¼ cup sherry
  • ¾ cup vegetable broth
  • 4 cups button(white) and crimini mushrooms
  • Salt and black pepper to taste
  • Chopped parsley, to garnish
  1. Heat the oil in a pan
  2. Add the onions, and garlic and cook until soft
  3. Slowing stir in the tomato paste, broth, sherry, and washed mushroom.
  4. Bring to a boil, cover and simmer gently for 40 minutes
  5. If the liquid is too much, remove the lid, and let it simmer for another 5 minutes
  6. Add salt and pepper to taste
  7. Garnish with parsley

If you do not have sherry, one tablespoon of red wine vinegar should do.
