Simple Quinoa Salad – Healthy meal for the whole family

 

A straightforward and healthy salad that only takes a few minutes to prepare that the whole family will love.

  • 2 1/2 cup Quinoa
  • 1/2 medium Onion
  • ¼ cup Goji Berries
  • 2 cup Chickpea
  • ¾ cup Yellow Bell Pepper
  • 1 1/2 tsp Cumin
  • 1 tbsp Coconut Vinegar
  • ½ tsp freshly grated Nutmeg
  • Salt to taste
  1. Cook quinoa until tender
  2. Cook Chickpea until soft or use canned Chickpeas
  3. Slice the Yellow Bell pepper
  4. Dice the Onion
  5. In a large bowl combine all ingredient except the seasons and stir
  6. Add Coconut Vinegar, Cumin, and salt and mix again
  7. Taste to adjust the salt

This Best Easy Quinoa Salad also goes well with Hummus.
