SPICED ROASTED PUMPKIN SOUP

Marvelous soup with whole pure ingredients that take only a few minutes to complete.

  • 14fl oz Can of coconut milk
  • 21/4 pumpkin, peeled, seeds removed and cubed
  • 2 Garlic Cloves
  • 1in piece fresh ginger, chopped
  • 1 Large onion, chopped
  • 2 Cups vegetable broth
  • 1 Tablespoon Turmeric
  • ½ Tablespoon Fennel seeds
  • ½ Tablespoon Coriander
  • 1 Tablespoon Hot chili powder
  • lime juice(optional)
  1. Heat a saucepan and saute’ the coriander, fennel, and turmeric until the aromas are released.
  2. Stir in onions, ginger, and garlic, and cook for a few more minutes
  3. Add the cubed pumpkin and chili powder
  4. Mix well, season with salt, and pour over the vegetable stock
  5. Cover the pan and simmer until the pumpkin is soften
  6. Add the coconut milk and stir, do not cover because it will curdle
  7. Bring the soup back to a simmer and cook until the pumpkin is softened enough to crush with a spoon.
  8. Blend in a food processor or hand blender
  9. Taste, and if you wish to sharpen the flavor, stir in a lime juice
