Ingredients

● 3 medium size sweet potatoes
● 2 cup great northern beans
● 1 avocado
● 3 sticks green onion
● Tortillas
● Crispy kale slaw(kale, carrot, red & green
cabbage)
● Sriracha(optional)

Sauce

● 1 vanilla cashew yogurt
● 3 chipotle pepper in adobo sauce
● ½ tsp cumin
● ½ tsp chili peppers
● ½ smoked paprika
● 1 tbsp lime juice

Preparation

1. Preheat oven at 400 degrees .
2. Wash sweet potatoes and sliced into
smaller cubes with skin.
3. Sprinkle vegetable broth on sliced
potatoes
4. Add smoked paprika, salt, and toss
5. Place seasoned potatoes on parchment
paper
6. Bake for 30 to 45 minutes
7. Place all sauce ingredients into a blender
and blend until smooth
8. Mix crispy kale slaw, great northern
beans, and baked potatoes and
season with salt and pepper
9. Take one tortilla, add some mashed
avocado, potatoes, sauce, and
sprinkle of green onions

Tips

Add some lime juice to avocado to prevent it
from turning brown.
