Artichoke Beet Salad

Serves 1 people

Ingredients

  • 1 cup romaine lettuce
  • 1 ½ cup other greens
  • ¼ avocado, slices
  • ⅔ cup steamed beets, sliced
  • ⅔ cup chickpeas
  • 2-3 artichoke soaked in water
  • 3-4 half walnuts
  • Salt and pepper to taste
  • Sprinkle pomegranate (optional)
    Dressing
  • 1 teaspoon Stone ground mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon agave nectar(optional)

Preparation

  1. In a large bowl, combine all the
    ingredients.
  2. Add the dressing, adjust as needed.
  3. Add salt and pepper to taste.

Tips

If using a canned artichoke, make sure it is
not soaked in salt and oil.
