CARROT & CHICKPEA SALAD
This recipe is easy to make, delicious, and packed with nutrients.
- 6 Medium Size organic carrots
- 2 Cups Chickpeas
- 1 1/2 Cups Cilantro
- ⅓ Cups Pistachios
- 10 Dates
- 1 Lime juice
- ½ Tablespoon Turmeric
- ½ Tablespoon Freshly grated Nutmeg
- ½ Tablespoon Black pepper
- Salt to taste
- A can of Chickpea(BPA Free Lining can is best) or you can cook your own
- Grate the carrots into a container.
- Chop the dates into any size of your choosing.
- Chop the Cilantro as well.
- Combine all the ingredients in a big bowl and mix.
