CARROT & CHICKPEA SALAD

This recipe is easy to make, delicious, and packed with nutrients.

  • 6 Medium Size organic carrots
  • 2 Cups Chickpeas
  • 1 1/2 Cups Cilantro
  • ⅓ Cups Pistachios
  • 10 Dates
  • 1 Lime juice
  • ½ Tablespoon Turmeric
  • ½ Tablespoon Freshly grated Nutmeg
  • ½ Tablespoon Black pepper
  • Salt to taste
  1. A can of Chickpea(BPA Free Lining can is best) or you can cook your own
  2. Grate the carrots into a container.
  3. Chop the dates into any size of your choosing.
  4. Chop the Cilantro as well.
  5. Combine all the ingredients in a big bowl and mix.
  6. Enjoy.
