CHIPOTLE PLANTAIN CAKES – SWEET AND SPICY

 

Moist, sweet and spicy with a kick meal that is easy and healthy to make.

  • 3 Cup Ripped Plantains
  • 1 Cup Grated carrots
  • ½ Cilantro
  • 2 Tablespoon Grated garlic
  • 3 Tablespoon Frontera Chipotle Pepper Adobo
  • ½ Tablespoon Cayenne Pepper
  • 1 Tablespoon Oregano
  • Salt to taste
  1. Peel and slice ripped plantains into cubes and bake at 300 degrees for 20 minutes
  2. Add all the ingredients except the Chipotle sauce in a food processor
  3. Pulse till all ingredient are roughly chopped
  4. Transfer them to a large bowl
  5. Add chipotle sauce and mix
  6. Form them into a cake shape and refrigerate for 30 minutes
  7. Pre-heat the oven to 350 degrees
  8. Bake for 30 minutes and flip them over after 15 minutes
