Couscous Edamame stir fry

Ready in 10 minutes
Serves 3 people

Ingredients

  • 2 cups cooked couscous
  • 3 carrot sticks(halved and sliced)
  • 2 ½ cups cooked edamame
  • ½ cup cooked sweet corn
  • 3 tbsp basil pesto(dairy-free)
  • 1 tbsp olive oil

Preparation

  1. In a hot pan, add olive oil and chopped carrots and saute until soft.
  2. Add edamame, corn and stir for 2 minutes.
  3. Add couscous and pesto slowly.
  4. Lower the heat and cover for 5 minutes, stirring every minute.
