Ready in 10 minutes
Serves 3 people
- 2 cups cooked couscous
- 3 carrot sticks(halved and sliced)
- 2 ½ cups cooked edamame
- ½ cup cooked sweet corn
- 3 tbsp basil pesto(dairy-free)
- 1 tbsp olive oil
- In a hot pan, add olive oil and chopped carrots and saute until soft.
- Add edamame, corn and stir for 2 minutes.
- Add couscous and pesto slowly.
- Lower the heat and cover for 5 minutes, stirring every minute.
