An amazing and filling salad that is good your health.

  • 3 cups chickpeas
  • 3 cups steamed beets, cubed
  • ½ cup onion
  • ½ cup cilantro, chopped
  • One tablespoon red curry paste
  • 1-2 tablespoon agave nectar
  • One tablespoon red wine vinegar
  • Salt and pepper to taste
  1. Bowl 1. Add chickpeas, cilantro, beets, and onion in a large bowl
  2. To make the dressing
  3. Bowl 2. Add curry paste, vinegar, and agave into a small bowl and whisk together
  4. Combine dressing with bowl 1 and toss
  5. Add black pepper and salt to taste

You can replace the red wine vinegar with olive oil or any oil of your choice.
