FRESH ROSEMARY LENTIL SOUP

 

Creamy, healthy, and flavorful lentil soup that is easy and quick to make.

  • 1¼ Cups Lentil
  • 3 Cups Vegetable Broth
  • 1 Cups Onion, chopped
  • 2 Celery sticks, chopped
  • 5 Clove garlic
  • 2-3 Branches rosemary
  • 1-2 Lemons
  • 1 Teaspoon Cayenne
  • 1 Teaspoon Cumin
  • ½ Black pepper
  • 1 Tablespoon olive oil
  • 2 Water or more
  • 2 Teaspoons Coconut sugar(optional)
  1. Heat oil in a large pan
  2. Add onion, garlic, and celery and cook for 5 minutes
  3. Add vegetable broth, lentil, rosemary, and a cup of water and stir
  4. Reduce the heat and simmer for 30 minutes
  5. Squick lemon juice and simmer for another 5 minutes
  6. Pour soup into blender or food processor and process until smooth
  7. Transfer soup back to to the pan
  8. Add cumin, cayenne, and salt to taste
