OIL-FREE ROASTED TOMATO PESTO

 

Fantastic, and fresh ingredients pesto is easy to make and delicious.

  • 4 Cup Roasted tomatoes
  • 1-2 Cup Fresh Basil
  • 5+ Cloves of garlic
  • ½ Cup Pine nuts or walnuts
  • 1 Tablespoon Red wine vinegar
  • Salt
  1. Drain any excess water from your roasted tomatoes if using can
  2. Place tomatoes, pine nuts, garlic, and basil into a food processor
  3. Process until all ingredients are finely chopped
  4. Add red wine vinegar and process to mix
  5. Add salt to taste

Save the excess water drained from the tomatoes, and add to the pesto to get the right texture.
